# Thanksgiving Turkey

## Ingredients

- `1` turkey, 12-16 pound

### Brine

- `2` gallons water
- `1.5` cups canning salt
- `1/3` cup brown sugar
- `1/4` cup Worcestershire sauce
- `3` tablespoons minced garlic
- `1` tablespoon ground black pepper

### Roast

- `1` medium yellow onion
- `1` small apple
- `1` (12- to 15-pound) turkey
- `6` sprigs fresh thyme
- `4` sprigs fresh rosemary

## Instructions

### Brine 

- mix everything but the turkey in a food-grade bucket or container large enough to hold your turkey
- remove the neck and giblets bag and toss
- carefully submerge turkey in brine
- cover and store in the refrigerator for two days

### Roast

- preheat oven to 350F (use an oven thermometer to check, your oven is probably not correct)
- remove the turkey from the brine
- put the turkey breast side down in a roasting pan on a rack
- stuff the turkey with apple, onion, thyme, and rosemary
- roast the turkey until the thickest part of the breast measures 160F (about 3 hours)
- let rest for 1 hour
